Ok so I made FABULOUS Chocolate Cupcakes with
Peanut Butter Cream Cheese Filling and Cream Cheese Frosting!!!!
No Doubt that these CuppinCakes are to die for! 
I will share my wonderful recipe with you and tell you what made these so YumYum!
When I opened the oven I was so surprised how these have raised up like that!!!
My Beautiful finish, I had people coming over so I thought, OH what a
wonderful Idea I can make cupcakes :)
I was gobbling it down but then realized that if I didn't show you what's
 inside that you wouldn't be as thrilled!
HAHA I found this cupcake holder at a place in WilliamsBurg, Virginia!
I fell in love with it! So adorable
As you can see, my cupcake is inside! :P
Ok so its recipe time! Everything that I put on here is gluten free because 
I have celiac disease, so just letting you know!
And by far far I think I just invented THE best Gluten Free Cupcake in the World!
Everyone absolutely loved them........And I cant stop eating them... they don't 
taste gluten free what's so ever!!!!! ENJOY all you celiacs and for 
those who don't have a gluten allergy than I highly suggest that you try these anyway!
OH and did I mention that these are very moist and are the best cupcake in the world!

This is my updated made myself flour mixture that made these 
specific cupcakes the best thing in the world!

Sam's GF Flour Mix

2 cups white rice flour
2 cups brown rice flour
1 cup tapioca starch
1 tablespoon xanthan gum
1/2 teaspoon ascorbic acid
2 packets unflavored gelatin

Chocolate cupcakes

2 1/4 cups of Sam's GF flour Mix
1 2/3 cups sugar
3/4 cup butter or margarine, room temperature
2/3 cup unsweetened baking cocoa
1 1/4 cups water
1 1/4 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 teaspoon vanilla 
2 eggs

1. Heat oven to 350 degrees. Place paper baking cup in each of 24 regular-size muffin cups.
2. In large bowl, beat all ingredients with electric mixer on low speed 30 seconds, 
scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally.
divide batter evenly among muffin cups.
3. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes; remove from pan to cooling rack. Cool completely about 30 minutes.

Peanut Butter Cream Cheese Filling

2 overflowing tablespoons of creamy peanut butter (make sure 
its GF and that no one else has used it!)
4 oz. cream cheese
Add milk to creamy likeness
Add sugar to likeness

1. Mix all ingredients with electric mixture until creamy!
2. After cupcakes have cooled, poke a half inch circle in center of cupcake
half way through cupcake.
3. Put peanut butter cream cheese mixture in a ziplock bag, with scissors;
cut one of the bottom corners and fill the cupcakes with the mixture!

Cream Cheese Frosting

1 package (8 oz) cream cheese, softened
1 tablespoon milk
1 teaspoon clear vanilla
4 cups powdered sugar

In large bowl, beat cream cheese, milk and vanilla with electric mixer on low
speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, until
smooth and spreadable. Refrigerate any remaining frosted cupcakes!

Sammy!
Those Blueberry's made these cupcakes  totally awesome.....ahh Beautiful!!!!
Teh Frosting! Was a little gooier than I expected once I added the Blueberry's to the Buttercream, but it turned out ok! The frosting never touch the counter :)
The frosting wasn't as blueberry tasting as I wanted but it was like Buttercream with a hint of Blueberry......they were still very Delicious and full of sweetness!!!!
And my feets, got a little borederated!

These cookies are absolutely wonderful!!!! Yum Yum
I twisted the recipe around a little and used my own flour because I didn't 
want them to taste weird considering that I have CD n'all!
Chocolate Chip Cookies
1 cup vegetable shortening
2 cups plus 2 tbls brown-rice flour mix
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp xanthan gum
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 tbls vanilla
12 oz semisweet chocolate chips
1 cup chopped walnuts (optional)

Put oven rack in middle position and preheat oven to 375*F.
Lightly grease 2 large baking sheets. Whisk together flour mix, 
baking soda, salt, and xanthan gum in a small bowl.
Beat together shortening and sugars in a large bowl with an electric mixer 
or wooden spoon. Add eggs and beat together. Then add the vanilla and beat together.
Pour in flour mixture and stir with wooden spoon until combined.
Stir in chocolate chips and walnuts.
Drop heaping tsps of dough 2 inches apart onto baking sheets. 
Bake, 1 sheet at a time, until golden, 9 to 15 minutes.

My own recipe for flour that I used in this recipe instead of the 
brown-rice flour mixture!!!! Here ya go, have fun with it!!!

Gluten Free Flour Mix
4 cups brown rice flour
1 1/2 cups sweet rice flour or white rice flour
1 cup tapioca starch flour
1 cup rice bran
1 tbls xanthan gum
1/2 tsp ascorbic acid
2 tbls unflavored gelatin

Last two ingredients hold baked goods together better.
Whisk all ingredients together.
Tip: make large batches and store in plastic zip lock bags in freezer.

Top it off with a nice glass of milk! :P

Im totally Odally not into this gluten free crap! Its really kool when you can experiment with food but when you live with people that dont have celiac disease it really sucks! I hate shopping at the grocery store ecspecially when im shopping by myself. The only upside to this sad sad story is change. I wanted to change the way I eat and being diagnosed with CD is an open door to opportunity! I found out that I can't eat all the bad fattening stuff! Which is a a very delightful healthy step to eating better! Its a loaded challenge but exciting to see what I can come up with! Hmmm when I own my cupcake business, the cupcakes totally have to be gluten-free! MuaHAHA HAHA HA! "THE CUPCAKES WILL BE CHILL AND DELECTABLE"

Hmm "CD" I could get used to this! Think of it, if we changed the world to GLUTEN FREE, the world in general WOULD BE a better place! Help me fight crime by changing your life GLUTEN FREE! Gluten free banana bread sounds about good right now mmmm!

"The Real You"

How can you tell through expression who you are? How can you tell through words your personality?

Who are you?

I find myself falling under the bridge at times. I can get a confidence boost from nowhere, and I feel like I can do anything. I just turned 20 and all I do is work a full time job. Im not in a relationship, not since highschool and im totally struggling for who I am. I wonder sometimes if being in a good relationship would help me find the person im supposed to be, but then I let myself believe that im supposed to find myself, not someone else. Im friendly at times hehe and I go with the flow. I cherish love when I have it and when I dont have it then thats alright with me. Im oober shy but I guess thats just a nervous factor. I feel intimidated around people I just meet but im workin on that. Im so honest and for real that it kinda bothers me. Im more down to earth than usual. I look toward the simple things for happiness. I dont care when people think things are a big deal, I compromise but then I rebel and do it my way. My true colors, I have no true colors, im all over the flippin place. Who I am im not really sure , but just to BE is fine with me!

As of right now 7:42 tuesday march 31,2009 i am stuffing my face with ice cream and drinking a big cup of coffee! One thing ive experience with icecream is DONT lick the metal ice cream scoop after dishing yourself some delicious ice cream. the pain haha well flippin hurts!
