These cookies are absolutely wonderful!!!! Yum Yum
I twisted the recipe around a little and used my own flour because I didn't 
want them to taste weird considering that I have CD n'all!
Chocolate Chip Cookies
1 cup vegetable shortening
2 cups plus 2 tbls brown-rice flour mix
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp xanthan gum
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 tbls vanilla
12 oz semisweet chocolate chips
1 cup chopped walnuts (optional)

Put oven rack in middle position and preheat oven to 375*F.
Lightly grease 2 large baking sheets. Whisk together flour mix, 
baking soda, salt, and xanthan gum in a small bowl.
Beat together shortening and sugars in a large bowl with an electric mixer 
or wooden spoon. Add eggs and beat together. Then add the vanilla and beat together.
Pour in flour mixture and stir with wooden spoon until combined.
Stir in chocolate chips and walnuts.
Drop heaping tsps of dough 2 inches apart onto baking sheets. 
Bake, 1 sheet at a time, until golden, 9 to 15 minutes.

My own recipe for flour that I used in this recipe instead of the 
brown-rice flour mixture!!!! Here ya go, have fun with it!!!

Gluten Free Flour Mix
4 cups brown rice flour
1 1/2 cups sweet rice flour or white rice flour
1 cup tapioca starch flour
1 cup rice bran
1 tbls xanthan gum
1/2 tsp ascorbic acid
2 tbls unflavored gelatin

Last two ingredients hold baked goods together better.
Whisk all ingredients together.
Tip: make large batches and store in plastic zip lock bags in freezer.

Top it off with a nice glass of milk! :P
